Chateau Figeau | Throwback | Dream of Wine Journey🛫🍇

Throwback to my 2022 visit to Château Figeac in Saint-Émilion, where I was captivated by their elegant Cabernet-driven wines and stunning vineyard views! 🍷

That same year, Figeac earned its Premier Grand Cru Classé A status, and now their 2022 vintage is making waves with a perfect 100-point score🌟

Recent news of the latest 2024 en primeur release price was less 36% compared to 2023 and less 62% than 2022.

Figeac’s warm hospitality and their beautiful chateau, inspired my love for wine adventures and with Bordeaux leading French’s wine tourism(per 2022 stats), motivate a dream of wine journey would be a solution to boost the region and the wines again.

Favourite Italian Haunt | Italian + Burgundy | 💜💜

Gathered at my aunt’s favorite Italian restaurant, the air thick with laughter and the clink of glasses, luckily got the buy-one-get-one-free corkage deal to finalize our wine selection of the night.

Gaja Brunello di Montalcino 2018

Truffle pasta, ribeye, Iberico pork chop, and stories that flowed as freely as the wine. Midway through, our sommelier joined us, sparking a lively chat about wine palates. He shared how tough it can be for Cabernet Sauvignon lovers to switch to the nuanced finesse of Pinot Noir without a gradual journey—training the palate to catch those subtle, fresh berry notes.

I couldn’t help but nudge him, half-teasing, “If you want to fall in love with Burgundy, you’ve got to dive in!”

As the night wound down, the Brunello’s rich, velvety depth paired perfectly with our main courses, while the Pinot’s delicate charm lingered in our hearts.

Here’s to good friends, great wine, and the courage to try something new.

A Night of Baijiu | Moutai | Sichuan Cuisine

Although I’m not a big fan of Chinese Baijiu, still good to explore a bit of it.

Great chance to compare multiple mature vintages of Moutai, including 2007, 2019, 2020, 2024. All with different depth of Maotai sauce flavour.

Good pairing to enjoy delicious sichuan cuisine by Mian!

Didier Dagueneau | Le Mont Damne | Minerality 💛🖤 
The vineyard of ‘Les Monts Damnes’ in Sancerre was acquired in 2000, also farmed organically and biodynamically.

Wine was crystal clear honey yellow, very nice white flowers, came with slightly herbaceous nose with hints of slightly toasted oak, the integration may take a few more years to complete but wine is good to drink now.

Beautiful mineral palate came with fresh, juicy citrus fruit and attractive acidity.

Marc Roy | Honestly & Genuine | A Wine to Keep
🪾Marc Roy Gevrey Chambertin VV is made from 80 years old vines from the vineyards of Carougeot, Vignes Belles, La Justice, Es Murots, Les Crais, Les Seuvrees and Jouise.

“Millerandage” are able to produce from their vineyards, which is a kind of mutation in particular year, and berries are small, with thick skin and without seeds.

Wines made from these grapes will have higher concentrations and complexity.

🍷It had high tannins at the beginning which was very different from the typical Burgundy Pinot Noir. After 2-3 hours of opening, tannins was softened and developed a slightly muscular ripe red and blue berry.

It is a wine good to keep to 3-5 years and check the development. Great potential!

Nuva | Wine Gathering | Grand Cru Night

Another restaurant located in Chek Lap Kok, next to the HK airport. Rare opportunity to compare different domaines’ Echezeaux🤭

❤️The most surprise me was the David Duband Ech, it opened beautifully the next day in a Lobmeyr Burgundy glass( Recently testing keep ongoing to compare the Riedel and Lobmeyr glasses):

Intense, concentrated floral perfume nose along ripe red fruits. Creamy oak was not so obvious in the Lobmeyr glass, integrate with the floral nose perfectly.

💜For Hudelot-Noellat RSV 2020, it opened at the last minute before finishing it…over 18 hours…
Powery orange flower, rose perfume, very nice berry acidity, fine and soft round finish.

❤️PP, always good, ripe juicy red fruits, vintage 2019 take times to integrate, since I constantly try different bottles of the 2019

💜Domaine de La Vougeraie 2010
Very good performance in the Riedel glass, it was in pristine condition, never moved since the purchase, light but airy perfume nose, with hints of creamy oak at the beginning, ripe red fruit, good acidity, round light finish.

❤️And it was the first time the Clos de Tart can be opened, interestingly, the spice, mint nose came along with all the fruit increased the complexity of the wine.

Signed up in its waiting list for a Saturday lunch. Luckily got a table a week before after I made a back-up reservation.

First thing first was to check their wine list to see if there is anything that interested me.
Found out their by the glass wine list is more attractive than the rest of the wine list.

Since recently still impressed by Richard Leroy’s Chenin Blanc, ordered a glass of Simon Batardiere, Montbenault 2023 as I understand that he is the neighbour of Richard Leroy and inspired by him.

The wine style is different. Bottle was opened the day before, nose was still very close, on the palate, crispy acidity with some lemon, citrus, white blossom. I believe it will perform better in a Burgundy glass.

Prieure Roch | Own Character | Vintage 2020🤩

Although it has experiencing a decrease in demand since 2024, quality still maintains perfectly, unveil the character of the vintage together with the terrior of the cru.

Vintage 2020 has more ripe red fruit, hints of rose floral, good structure of the body and intensity.

Bollinger | La Grande Annee 2014 | Classical 🍾🥂

With a blend of 61% Pinot Noir and 39% Chardonnay, and a classic Bollinger oak barrels vinification, developed the sensations of freshness aromas like crispy apple, pear, white blossom, minerality in the wine increase the complexity, creamy bubbles, and a good long finish.

A perfect classic champagne!

Sylvain Pataille | Pinot Beurot | Unusual🤯💙

Pinot Beurot is Pinot Gris’s name in Burgundy. Planted in 1929 and 1930.

Hints of honey, nutty and oily texture at the beginning, after 2 hours of opening, acidity was slowly evolved to bring the wine alive along with melon and apricot flavour.

Good trying of the ancient Burgundian grape variety!

Performed elegantly in Lobmeyr glass.

La Chaume des Lies | Saint Romain | Established in 2021

Had a chance to try another new natural wines, 2022 vintage from Domaine La Chaume des Lies, a passionate, and young winery.

However, the wines performance was like sailing, experienced the sea wave, fluctuation of the aromas and flavours was a bit huge with large gaps.

For 2022, which is a very good year, I probably need some more time to digest and understand the wines.

Marius Selosse | The New Gem | Clos Roger Blanc de Blancs🍾

The cuvée Clos Roger was made from the tiny “clos Roger” parcel in the Selosse’s own parcel located in Avize Grand Cru. The production was limited to 700 bottles.

Excited to unveil the Champagne, dedicate bubble came along with beautiful floral nose, hints of yeasty and beard.
On the palate, refreshing ripe pear, white blossom, comfortably acidity, perfectly balanced, long toasty finsh.

Took the bottle of Nizon from my fridge out for my dear friends, let them try something different from Burgundy lol

First time to try the Nizon Cuvée, a blend of Grenache noir, Cinsault, Aramon, Clairette, with slightly higher alcohol percentage(14%) than normal Bourgogne rouge(13%), lovely red fruit, some spices.

-45-year-old plot with south east exposure

Les Petits Monts
-50-year-old plot, located on the top of the hill, next to Clos Parentoux and above Richebourg

Les Chaumes
-29-year-old rocky plot below Malconsorts and La Tache

For Les Hautes Maizieres and Les Petits Monts are the new wines in 2022. Les Chaumes performed the best.

Technically it was not a wine trip, but discovered cocktails culture is more popular than wines, had a cocktail bar right at the place I stayed. Good classic cocktail btw and tried the Vietnamese crafted beer🍻

Thanks for invitation by @miona0723 , experienced travelling with Gen Z lol, great travel company, had girl talks and looking forward if women aged 60s is the golden period of one life.

It would be good to carry some wines next time to Danang, enjoy a very good value wine holiday with good tasty seafood.

Frederic Savart | Lobmeyr | Refined Champagne Glass Experience🥂

The cuvee, L’accomplie from Frederic Savart, a blend of 80% Pinot Noir and 20% Chardonnay, a big lover of Pinot Noir based Champagne.🍾

The night, I did a test between the Lobmeyr Champagne A glass and other wine glasses, the result was quite impressive. Nose from the Lobmeyr glass was amazing, showed layers of fresh citrus and toasty with great concentration, which comprehensively elevated the performance of Frederic’s champagne!

Vinification | Experiment & Experience | Nov 2024

A learning outcome of the viticulture and vinification, made the own wine by Chinese Kyoho grape, post-fermentation adjustment like acidification and mixed it with grape and oak tannins.

For me, I would say white would taste better after bubbling. Red got bubblegum, fresh red fruit with hints of tannins to support.

I appreciated that Doctor’s comment for the wine was “The most serious wine compared to others”.

It was fun and also understood that winemaking is a very hard work. We shouldn’t waste any drop of it.

Hairy Crab Night | Mansong Pairing | Harmonious

Talked with friends about the hand carry quota of the renowned Chinese Wuchang rice per person to HK and how tasty of the rice.

First time for everyone tried the pairing of Mansong with hairy crab, which was smoothly freshen up the rich flavours of the creamy part of the crab 🦀🦀🦀
